Affordable Spreadable Butter
I was wandering around the grocery store today. It was an interesting experience. Usually I run in with a list and run back out again. However, today I walked to the store and it was a bit slippery out, so everything about me clicked into "slow motion". This is most likely the reason why I stood in front of the case of butter at the grocery store for almost 15 minutes until a worker came up to me and said, "Do you need help finding something?"
I didn't. I was simply fascinated with the selection. About 50% of the selection was some version of margarine. For some reason (perhaps me being in a hurry and usually shopping at the health food store? Perhaps me being naive and thinking it mattered if you sold things that were dangerous to eat?) I didn't realize that margarine was still so available. I had just assumed because of all the health dangers it has been proven to have that it had been taken off the market. The second thing that surprised me was the selection of whipped "healthy" butters. They all ranged in price from $2.78 - $4.00 for small tubs that might last the average family a day or two. I decided to go home and make my own. I am sharing the recipe with you below. Another benefit of making my own is that I was able to use olive oil instead of the less healthy canola or vegetable oil that many of the leading spreads use in their "healthy butter spreads".
Spreadable "Butter"
1/2 cup salted butter (1 stick)
1/3 cup light olive oil
TIP: For best results, ingredients should be cold.
Equipment:
Electric mixer (or whisk, really strong arm and some extra time)
TIP: For best results, chill mixer beater and bowl.
Add chilled butter to chilled mixer bowl. If you use a wisk you might want to make this a group/family project and take turns.
Whip butter on high for several minutes until smooth and fluffed.
Reduce mixer speed to medium - medium-high and gradually add in oil.
Scrape down sides of mixer and whip several minutes more.
Note consistency is slightly runny immediately after whipping.
Scrape mixture into container and allow to chill (overnight for best results).
Enjoy!
This mixture has less saturated fat than pure butter so it is kinder to your bread AND your body.

Brilliant! Such a simple and easy solution to the very unhealthy butter spreads that are out there. I simply do not buy them do to the price of the healthier ones. Thank you for this wonderful solution!
